Cauliflower Mashed Potatoes

Lighten up your mashed potatoes by mixing them with mashed cauliflower. It adds creaminess and cuts down on carbs, but still tastes indulgent with a little garlic and olive oil.

Ingredients
  

  • 1 medium head of cauliflower cut into florets
  • 2 large potatoes peeled and cubed
  • 3 tbsp olive oil or butter for dairy-free, use vegan butter
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish

Instructions
 

  • Boil the cauliflower and potatoes in salted water until tender, about 15 minutes.
  • Drain and return to the pot.
  • Add olive oil or butter, garlic, salt, and pepper.
  • Mash or blend until smooth.
  • Garnish with fresh herbs and serve warm.
