Chickpea & Veggie Collard Wraps

Packed with fiber and nutrients, these wraps use collard leaves instead of tortillas for a refreshing, crunchy twist!

Ingredients
  

  • 4 large collard leaves
  • 1 can chickpeas rinsed and mashed
  • ¼ cup shredded carrots
  • ¼ cup diced bell peppers
  • 1 tbsp tahini
  • Salt pepper, and a pinch of cumin

Method
 

  1. In a bowl, mash chickpeas with tahini, salt, pepper, and cumin.
  2. Lay collard leaves flat and add chickpea mix, carrots, and bell peppers.
  3. Roll tightly and enjoy as wraps.
