Ingredients
  

  • 1 lb chicken thighs boneless and skinless
  • 4 cups cauliflower florets
  • 1 can coconut milk (14 oz)
  • 4 cups chicken broth
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Add chicken, cauliflower, broth, and turmeric to the Crockpot.
  • Cook on low for 4 hours.
  • Stir in coconut milk and season with salt and pepper.
  • Shred chicken in the pot and serve with fresh parsley on top.
