- 1 lb chicken thighs boneless and skinless
- 4 cups cauliflower florets
- 1 can coconut milk (14 oz)
- 4 cups chicken broth
- 1 tsp turmeric
- Salt and pepper to taste
- Fresh parsley for garnish
Add chicken, cauliflower, broth, and turmeric to the Crockpot.
Cook on low for 4 hours.
Stir in coconut milk and season with salt and pepper.
Shred chicken in the pot and serve with fresh parsley on top.
