Crispy Chickpea and Cucumber Wraps

These wraps combine crunchy chickpeas with refreshing cucumbers and a creamy tahini dressing for a flavorful, filling meal.

Ingredients
  

  • 1 cup chickpeas rinsed and dried
  • 1 cucumber thinly sliced
  • 3 gluten-free wraps
  • 1 tbsp olive oil
  • Salt pepper, and paprika to taste
  • 1 tbsp tahini mixed with 1 tbsp lemon juice for dressing

Instructions
 

  • Sauté chickpeas in olive oil with salt, pepper, and paprika until crispy.
  • Spread tahini dressing on each wrap.
  • Add chickpeas and cucumber slices, then roll and serve.
