Gluten-Free Chicken Tortilla Soup

Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 1 can diced tomatoes
  • 1 can diced green chiles
  • 1 small onion diced
  • 4 cups gluten-free chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup frozen corn optional

Instructions
 

  • Place chicken breasts at the bottom of the Crockpot.
  • Add all other ingredients on top, stirring to combine.
  • Cover and cook on low for 6 hours.
  • Remove chicken, shred with a fork, and return it to the pot.
  • Serve hot with gluten-free tortilla chips, avocado slices, and fresh cilantro!
