Gluten-Free Chicken Tortilla Soup

Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 1 can diced tomatoes
  • 1 can diced green chiles
  • 1 small onion diced
  • 4 cups gluten-free chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup frozen corn optional

Method
 

  1. Place chicken breasts at the bottom of the Crockpot.
  2. Add all other ingredients on top, stirring to combine.
  3. Cover and cook on low for 6 hours.
  4. Remove chicken, shred with a fork, and return it to the pot.
  5. Serve hot with gluten-free tortilla chips, avocado slices, and fresh cilantro!
