This one-pan wonder combines juicy chicken with roasted veggies for a simple and delicious dinner. It's easy to make ahead and can be portioned for a few days’ worth of lunches or dinners

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 large zucchini sliced
  • 1 bell pepper sliced
  • 1 red onion sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F.
  2. Arrange chicken and vegetables on a sheet pan.
  3. Drizzle with olive oil, garlic powder, salt, and pepper.
  4. Roast for 30 minutes, flipping halfway through, until chicken is fully cooked.
  5. Portion into containers for lunch meal prep.
