- 4 boneless skinless chicken breasts
- 1 large zucchini sliced
- 1 bell pepper sliced
- 1 red onion sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Preheat oven to 400°F.
Arrange chicken and vegetables on a sheet pan.
Drizzle with olive oil, garlic powder, salt, and pepper.
Roast for 30 minutes, flipping halfway through, until chicken is fully cooked.
Portion into containers for lunch meal prep.
