Gluten-Free Slow Cooker Beef Stew

This stew is the ultimate comfort food, slow-cooked to perfection. It’s a wonderful one-pot gluten-free meal, and leftovers are even better the next day!

Ingredients
  

  • 2 lbs beef stew meat
  • 4 large carrots peeled and chopped
  • 4 potatoes peeled and chopped
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth gluten-free
  • 1 cup red wine optional
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce gluten-free
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp cornstarch for thickening

Instructions
 

  • Brown the beef stew meat in a large pan on medium heat. Transfer to a slow cooker.
  • Add carrots, potatoes, onion, and garlic on top of the beef.
  • In a separate bowl, mix beef broth, wine, tomato paste, Worcestershire sauce, salt, and pepper.
  • Pour the mixture over the beef and veggies.
  • Add bay leaves and cook on low for 7 hours.
  • After 7 hours, remove ½ cup of broth, mix in cornstarch, and add back to the stew to thicken. Let cook for an additional 30-40 minutes.
  • Remove bay leaves and serve!
