Maple Roasted Carrots
Whole roasted carrots glazed with pure maple syrup, a dash of cinnamon, and sea salt. Roasting enhances their natural sweetness while keeping the dish light and healthy.
- 1 lb whole carrots peeled
- 1 tbsp olive oil
- 2 tbsp maple syrup
- 1/2 tsp cinnamon
- Salt and pepper to taste
- Optional: fresh parsley for garnish
Preheat oven to 400°F (200°C).
Toss carrots with olive oil, maple syrup, cinnamon, salt, and pepper.
Spread them on a baking sheet and roast for 20-25 minutes, until tender and caramelized.
Garnish with parsley and serve warm.
