- 1 lb chicken breasts
- 1 cup quinoa rinsed
- 1 can diced tomatoes (14.5 oz)
- 2 cups chicken broth
- 1 tsp oregano
- 1/2 cup Kalamata olives
- Salt and pepper to taste
Place chicken in the Crockpot with quinoa, tomatoes, broth, and oregano.
Cook on low for 4 hours.
Add olives in the last 15 minutes.
Serve with a sprinkle of feta cheese, if desired!
