Mediterranean Chicken & Quinoa

Ingredients
  

  • 1 lb chicken breasts
  • 1 cup quinoa rinsed
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 1 tsp oregano
  • 1/2 cup Kalamata olives
  • Salt and pepper to taste

Instructions
 

  • Place chicken in the Crockpot with quinoa, tomatoes, broth, and oregano.
  • Cook on low for 4 hours.
  • Add olives in the last 15 minutes.
  • Serve with a sprinkle of feta cheese, if desired!
