Ingredients
  

  • 1 cup cooked quinoa
  • 2 cups mixed greens like spinach, arugula, kale
  • ½ avocado sliced
  • ¼ cup cherry tomatoes halved
  • 2 tbsp pumpkin seeds
  • Dressing: 1 tbsp olive oil 1 tbsp lemon juice, salt, and pepper

Instructions
 

  • Prepare quinoa according to package instructions.
  • Arrange greens in two bowls.
  • Top with quinoa, avocado, cherry tomatoes, and pumpkin seeds.
  • Drizzle with dressing, toss, and enjoy!
