Ingredients
  

  • 1 cup cooked quinoa
  • 2 cups mixed greens like spinach, arugula, kale
  • ½ avocado sliced
  • ¼ cup cherry tomatoes halved
  • 2 tbsp pumpkin seeds
  • Dressing: 1 tbsp olive oil 1 tbsp lemon juice, salt, and pepper

Method
 

  1. Prepare quinoa according to package instructions.
  2. Arrange greens in two bowls.
  3. Top with quinoa, avocado, cherry tomatoes, and pumpkin seeds.
  4. Drizzle with dressing, toss, and enjoy!
