This quick bowl is loaded with greens, protein-packed quinoa, and a sprinkle of healthy fats from avocado and seeds for an afternoon energy boost.

- 1 cup cooked quinoa
- 2 cups mixed greens like spinach, arugula, kale
- ½ avocado sliced
- ¼ cup cherry tomatoes halved
- 2 tbsp pumpkin seeds
- Dressing: 1 tbsp olive oil 1 tbsp lemon juice, salt, and pepper
Prepare quinoa according to package instructions.
Arrange greens in two bowls.
Top with quinoa, avocado, cherry tomatoes, and pumpkin seeds.
