Quinoa Stuffing
Replace traditional bread stuffing with quinoa, mixed with sautéed onions, celery, mushrooms, and fresh herbs. It’s a gluten-free, protein-packed alternative.
- 1 cup quinoa rinsed
- 2 cups vegetable or chicken broth
- 1 tbsp olive oil
- 1 onion finely chopped
- 2 celery stalks chopped
- 8 oz mushrooms sliced
- 1 tbsp fresh thyme or 1 tsp dried thyme
- 1 tbsp fresh parsley chopped
- Salt and pepper to taste
Cook quinoa in broth according to package instructions and set aside.
In a large pan, heat olive oil and sauté onion, celery, and mushrooms until soft, about 7-10 minutes.
Stir in thyme, parsley, salt, and pepper.
Combine cooked quinoa with the sautéed vegetables and herbs.
Serve warm as a stuffing alternative.
