Quinoa Stuffing

Replace traditional bread stuffing with quinoa, mixed with sautéed onions, celery, mushrooms, and fresh herbs. It’s a gluten-free, protein-packed alternative.

Ingredients
  

  • 1 cup quinoa rinsed
  • 2 cups vegetable or chicken broth
  • 1 tbsp olive oil
  • 1 onion finely chopped
  • 2 celery stalks chopped
  • 8 oz mushrooms sliced
  • 1 tbsp fresh thyme or 1 tsp dried thyme
  • 1 tbsp fresh parsley chopped
  • Salt and pepper to taste

Instructions
 

  • Cook quinoa in broth according to package instructions and set aside.
  • In a large pan, heat olive oil and sauté onion, celery, and mushrooms until soft, about 7-10 minutes.
  • Stir in thyme, parsley, salt, and pepper.
  • Combine cooked quinoa with the sautéed vegetables and herbs.
  • Serve warm as a stuffing alternative.
