Ingredients
  

  • 1 cup quinoa cooked
  • 1 cup broccoli florets
  • 1 bell pepper sliced
  • 1/2 cup carrots sliced
  • 2 tbsp tamari sauce gluten-free soy sauce
  • 1 tsp sesame oil

Instructions
 

  • Cook quinoa according to package instructions.
  • In a large skillet, heat sesame oil over medium heat.
  • Add broccoli, bell pepper, and carrots. Stir-fry for 5-7 minutes until tender.
  • Stir in cooked quinoa and tamari sauce.
  • Divide into meal prep containers for a nutritious, plant-based lunch.
