- ½ cup shredded carrots
- ½ cup purple cabbage sliced
- ½ avocado sliced
- 1 tbsp sesame seeds
- Dressing: 1 tbsp olive oil 1 tbsp rice vinegar, salt, and pepper
Arrange quinoa, carrots, cabbage, and avocado in a bowl.
Sprinkle with sesame seeds.
