- 1 cup quinoa cooked
- 1 zucchini sliced
- 1 bell pepper sliced
- 1/2 cup cherry tomatoes
- 1/4 cup hummus
Preheat oven to 400°F.
Toss zucchini, bell pepper, and cherry tomatoes with olive oil, salt, and pepper.
Roast on a baking sheet for 25 minutes until tender.
Divide quinoa into bowls and top with roasted veggies.
