Stuffed Mini Bell Peppers

Ingredients
  

  • 12 mini bell peppers
  • 1 cup cream cheese
  • ½ cup shredded cheddar cheese
  • 2 tbsp chopped fresh chives
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cut the tops off the mini bell peppers and remove the seeds.
  • In a bowl, mix cream cheese, cheddar cheese, chives, salt, and pepper.
  • Stuff each pepper with the cheese mixture.
  • Place on a baking sheet and bake for 15 minutes, until peppers are tender.
