- 1 large sweet potato cubed
- 1 cup black beans cooked or canned
- 2 cups baby spinach
- ¼ cup red onion diced
- 1 tbsp olive oil
- Salt and pepper
Roast sweet potato cubes with olive oil, salt, and pepper at 400°F for 20 minutes or until tender.
Toss with black beans, spinach, and red onion.
Serve with a sprinkle of extra olive oil if desired.
