Ingredients
  

  • 1 large sweet potato cubed
  • 1 cup black beans cooked or canned
  • 2 cups baby spinach
  • ¼ cup red onion diced
  • 1 tbsp olive oil
  • Salt and pepper

Instructions
 

  • Roast sweet potato cubes with olive oil, salt, and pepper at 400°F for 20 minutes or until tender.
  • Toss with black beans, spinach, and red onion.
  • Serve with a sprinkle of extra olive oil if desired.
