Turmeric Ginger Chicken Soup

- 1 lb boneless skinless chicken thighs, cubed
- 1 tbsp grated ginger
- 1 tsp turmeric powder
- 4 cups gluten-free chicken broth
- 2 carrots sliced
- 1 cup spinach
- Salt and pepper to taste
Sauté ginger in a pot, then add chicken and brown lightly.
Add broth, carrots, and turmeric; bring to a boil, then reduce to simmer for 30 minutes.
Stir in spinach until wilted, season, and serve warm.
