Turmeric Ginger Chicken Soup

Ingredients
  

  • 1 lb boneless skinless chicken thighs, cubed
  • 1 tbsp grated ginger
  • 1 tsp turmeric powder
  • 4 cups gluten-free chicken broth
  • 2 carrots sliced
  • 1 cup spinach
  • Salt and pepper to taste

Instructions
 

  • Sauté ginger in a pot, then add chicken and brown lightly.
  • Add broth, carrots, and turmeric; bring to a boil, then reduce to simmer for 30 minutes.
  • Stir in spinach until wilted, season, and serve warm.
