- 4 bell peppers halved and deseeded
- 1 cup cooked quinoa
- 1/2 cup black beans
- 1/4 cup salsa
- 1/4 cup shredded cheese
Preheat oven to 375°F.
Combine cooked quinoa, black beans, salsa, and shredded cheese in a bowl.
Stuff each bell pepper half with the mixture.
Arrange the peppers in a baking dish and bake for 35 minutes until the peppers are tender.
